Step 1: Clean potatoes.

Step 3: Reduce heat and cook for 20 minutes or until the centers are done but not mushy.
Step 4: Remove from heat and place in cold water.
Step 5: Peel potatoes and cut into 1/2-inch pieces.
Step 6: Add shrimp and vegetables, stirring gently.
Step 7: Pour oil and vinegar over the mixture.
Step 8: Allow ingredients to marinate for 1/2 hour.
Step 9: Add mayonnaise and stir gently.
Step 10: Refrigerate for at least two hours.
Step 11: Serve cold.
