"This such an easy recipe and so delicious. The yogurt really adds a nice flavor and tang to the chicken. I often grill vegetable kabobs separate; but, I find that cherry tomatoes and onions, both work very well mixed in with the chicken. But, make sure to plan ahead; this really works best when the chicken is marinated over night. Serve over rice or couscous for a quick and easy dinner. Also, you don't have to make kabobs; you could always use whole thighs or breasts if you prefer; and, grill the vegetables on the side. Cooking time does include marinating."

Step by Step Method

Step 1

Marinade ... Add all the ingredients to a blender, and pulse until smooth. Add to a large ziploc bag, or glass bowl along with the chicken cubes. Cover with plastic wrap, or close the ziploc bag; and refrigerate over night; or at least all day.

Step 2

Chicken ... Remove from the refrigerate and the marinade; and let the chicken set on the counter to take the chill off. You don't want to cook with cold chicken. Also, toss the marinade, it did it's job. You DO NOT want to re-use it.

Step 3

Skewer ... I like to use wooden skewers, but you can use metal ones as well. If using wooden skewers; and grilling outdoors - it is best to soak the skewers in water for 15 minutes or longer so they do not burn. This is important when using charcoal, not as important is using gas, but it is still a good idea.

Step 4

I like to skewer a tomato and onion slice in between each chicken piece; but, how you skewer them is up to you. You may like more tomatoes or more onions - there is no right or wrong. The onions and tomatoes will cook at the same rate as the chicken, which is what you want. Note: Do NOT overcrowd the skewers; otherwise, the chicken will steam, not brown and cook evenly. Season the skewers with salt and pepper.

Step 5

Grill ... Baking or broiling just doesn't do this dish justice; they just don't come out the same. An outdoor grill, or at least a grill pan is what you need. Lightly oil your grill or pan, and bring to medium high to high heat. Then, add the chicken, and grill until the chicken is done, turning often. About 3-4 minutes per side. They should take about 10-15 minutes on average. This really depends on the size of your kabobs, and the type of grill you are using. I find that a grill pan, may take a bit longer than an outdoor grill. As you know, cooking times are just a guideline.

Step 6

Serve and ENJOY! ... I like to serve these over rice or couscous. Sauteed spinach is a great side dish.
