"Creamy onion soup. It was very popular at the Japanese Yokota Officer's Club, hence the handle "YOC Soup". In the 60s and 70s everyone and their dog loved this soup."

Step by Step Method

Step 1

Saute onions in butter in large saucepan over low heat for 30 minutes or until tender and transparent.

Step 2

Blend in flour and pepper.

Step 3

Cook over medium heat, stirring until bubbly.

Step 4

Remove from heat and stir in milks, bouillon, bay leaf and stock.

Step 5

Return to heat.

Step 6

Bring to a boil, stirring constantly.

Step 7

Remove bay leaf.

Step 8

Sprinkle with Parmesan cheese.

Step 9

Boil for 1 minute stirring constantly.

Step 10

Season to taste.

Step 11

Place 1 slice French bread and 1 slice Swiss cheese in 8 large oven safe bowls.

Step 12

Pour soup over bread and cheese.

Step 13

Place bowl in broiler until cheese melts (or toast bread before hand in air fryer or toaster before you pour soup over it).
