Step by Step Method

Step 1

Soak rice for 30 minutes in 1/4 cup water.

Step 2

Heat oil in a saute pan and add onions and green peppers.

Step 3

Cook until the onions are translucent and peppers are tender.

Step 4

Add the garlic and cook for 1~2 minutes.

Step 5

Next add green chili, carrot, ground clove, ground cardamom and cinnamon stick.

Step 6

Mix well and cook for 3~4 minutes.

Step 7

Season with salt and pepper.

Step 8

Add the rice and 2 cups of water.

Step 9

Bring the mixture to a boil.

Step 10

Then cover and cook until all water is absorbed and rice is cooked through. (20 minutes )

Step 11

Take off heat and leave covered 5 minutes.

Step 12

Take out cinnamon stick and fluff; season to taste.

Step 13

Remove jalapeno.
