Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1/16 teaspoon ground cloves
  • 1/8 teaspoon ground cardamom
  • 1 cinnamon stick
  • 1/2 cup onion, diced
  • 1/4 cup green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 jalapeno, slit but whole
  • 1 cup carrots, grated
  • 12 ounces basmati rice, soaked for at least 10 minutes, (1 1/2 cups rice)
  • 2 1/4 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Soak rice for 30 minutes in 1/4 cup water.

  • Step 2: Heat oil in a saute pan and add onions and green peppers.

  • Step 3: Cook until the onions are translucent and peppers are tender.

  • Step 4: Add the garlic and cook for 1~2 minutes.

  • Step 5: Next add green chili, carrot, ground clove, ground cardamom and cinnamon stick.

  • Step 6: Mix well and cook for 3~4 minutes.

  • Step 7: Season with salt and pepper.

  • Step 8: Add the rice and 2 cups of water.

  • Step 9: Bring the mixture to a boil.

  • Step 10: Then cover and cook until all water is absorbed and rice is cooked through. (20 minutes )

  • Step 11: Take off heat and leave covered 5 minutes.

  • Step 12: Take out cinnamon stick and fluff; season to taste.

  • Step 13: Remove jalapeno.
