Step by Step Method
Step 1
Prepare noodles according to packet directions and then drain and rinse under cold water and drain well.
Step 2
Meanwhile, heat oil in a large wok over a high heat and add chicken in two bastes, stir-frying for about 2 minutes, or until tender.
Step 3
Add curry paste and cook, stirring for 1 minute and then return chicken to wok with noodles, coconut milk, snow peas and sauce and stir-fry for a further 2 minutes, or until chicken is cooked and sauce is slightly thickened and then remove from heat.
Step 4
To serve, divide among serving bowls and enjoy.
