Ingredients

The ingredients are:
  • 1 packet (200 gram) dried rice noodles (pad Thai rice stick noodles specified)
  • 1 tablespoon olive oil
  • 500 grams chicken breast (stir-fry strips)
  • 1 yellow onion (halved and thinly sliced)
  • 2 carrots, peeled and halved lengthways and thinly sliced
  • 1/3 cup curry paste(yellow)
  • 270ml coconut milk (can)
  • 200 grams snow peas (trimmed and cut in half lengthways)
  • 2 tablespoons fish sauce

How to Make

  • Step 1: Prepare noodles according to packet directions and then drain and rinse under cold water and drain well.

  • Step 2: Meanwhile, heat oil in a large wok over a high heat and add chicken in two bastes, stir-frying for about 2 minutes, or until tender.

  • Step 3: Add curry paste and cook, stirring for 1 minute and then return chicken to wok with noodles, coconut milk, snow peas and sauce and stir-fry for a further 2 minutes, or until chicken is cooked and sauce is slightly thickened and then remove from heat.

  • Step 4: To serve, divide among serving bowls and enjoy.
