Step by Step Method

Step 1

In a bowl mash the yams (or sweet potatoes) and then add all the remaining ingredients (-eggs) and mix together.

Step 2

Using your hands form the mixture into 18 patties (1/2 inch thick x 2 1/2 inches in diameter) -- if mixture does not hold together add more bread crumbs.

Step 3

Spray a skillet with nonstick cooking spray and heat the pan over medium heat; add patties and cook, turning once for 5-10 minutes or until golden brown ---DO NOT OVERCROWD PAN--YOU MAY NEED TO COOK IN BATCHES (or use two skillets which is what I tend to do).

Step 4

Serve hot topped with spicy or mango butter (https://www.recipezazz.com/recipe/mango-butter-34530) or spicy sauce.

When hubby learned I was making these, he said "count me out, you know I don't like sweet potatoes". Then he saw them and said "Just give me one little one". I did. and then all I heard was "Mmmm. good". That says it all! Loved the texture with all the other veggies/chiles. I used serrano chile because I wanted some heat. Frozen sweet corn. Oh, boy. These are good. I served with some leftover Jalapeno Lime Butter, and it shot it up a notch. We'll be having these again, for sure!
