Ingredients

The ingredients are:
  • 4 cups sweet potatoes (baked or canned yams)
  • 1 cup corn, frozen thawed
  • 2 tablespoons jalapeno chiles, minced
  • 2 tablespoons red bell pepper, chopped
  • 4 green onions, minced (optional)
  • 1/2 cup Monterey Jack cheese, shredded, optional
  • 2 cups bread crumbs ( panic bread crumbs or other dried bread crumbs, unseasoned)
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon, ground
  • 1/2 teaspoon nutmeg, ground
  • 2 eggs

How to Make

  • Step 1: In a bowl mash the yams (or sweet potatoes) and then add all the remaining ingredients (-eggs) and mix together.

  • Step 2: Using your hands form the mixture into 18 patties (1/2 inch thick x 2 1/2 inches in diameter) -- if mixture does not hold together add more bread crumbs.

  • Step 3: Spray a skillet with nonstick cooking spray and heat the pan over medium heat; add patties and cook, turning once for 5-10 minutes or until golden brown ---DO NOT OVERCROWD PAN--YOU MAY NEED TO COOK IN BATCHES (or use two skillets which is what I tend to do).
