Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Grease and flour a 9 x 5 x 3 inch loaf pan

Step 3

Sift flour with dry ingredients (-nutmeg) in a large bowl and then set aside.

Step 4

In a large bowl of an electric mixer combine the brown sugar, eggs and butter and beat at high speed for 3 minutes. Stir in the rest of the ingredients ( - marmalade). Add the dry ingredients mixture a little at a time, stirring well after each addition -- batter will be stiff.

Step 5

Add batter to the prepared pan and bake until tester inserted in center comes out clean - 70 minutes.

Step 6

Let cool completely before slicing.

Eating this sure brought to mind that Autumn has finally arrived, though it’s been unseasonably hot! Love those “Autumny” flavors going on here, but I must confess that I had to substitute pumpkin for the canned yams for the reason that I thought I had a can in my pantry and didn’t, so I turned to my pumpkin that I had stored in the freezer. I reduced the pumpkin so it wouldn’t be too wet and also increased the cinnamon. Otherwise, followed recipe as written. However, I think I made the mistake in adding a bit too much pumpkin, making the cake a bit wet (but my fault and not the fault of the recipe). Regardless, love the overall combination with the apple and there will be a next time, except that I will make sure that I have yams available! Thank you, ellie, for sharing. Made it for Billboard Tag.
