Ingredients

The ingredients are:
  • 2 cups all-purpose flour (sifted)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 3/4 cup brown sugar
  • 1/2 cup butter (room temperature)
  • 2 large eggs (room temperature)
  • 14 ounces yams (canned, drained 2 cups chopped))
  • 1 whole apple (peeled and chopped)
  • 1/4 cup chopped walnuts
  • 1 1/2 ounce package raisins (about 1/2 cup)
  • 2 tablespoons milk
  • 2 tablespoons orange marmalade

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Grease and flour a 9 x 5 x 3 inch loaf pan

  • Step 3: Sift flour with dry ingredients (-nutmeg) in a large bowl and then set aside.

  • Step 4: In a large bowl of an electric mixer combine the brown sugar, eggs and butter and beat at high speed for 3 minutes. Stir in the rest of the ingredients ( - marmalade). Add the dry ingredients mixture a little at a time, stirring well after each addition -- batter will be stiff.

  • Step 5: Add batter to the prepared pan and bake until tester inserted in center comes out clean - 70 minutes.

  • Step 6: Let cool completely before slicing.
