Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Butter a 9x13 casserole.
Step 3
(I'm just microwaving beans to get hot)
Step 4
1 lb. 4 oz. cut green beans frozen or 3 c. fresh green beans
Step 5
Boil them in salted water until they are just underdone.
Step 6
Meanwhile, melt 4 tablespoons of butter, add 4 tablespoons of flour, 1 teaspoon salt ( they used more salt back in the day, season to taste)and a good pinch of dry mustard in a skillet
Step 7
Cook over low heat until bubbly.
Step 8
Add 1 1/2 cups milk, cook until thick and smooth.
Step 9
Add 1/2 cup Velveeta processed cheese grated or diced off the heat.
Step 10
Stir until all is melted.
Step 11
Add the beans and pour into the buttered casserole.
Step 12
Sprinkle with grated Parmesan cheese and paprika.
Step 13
Bake at 350 degrees for 30 minutes until hot and bubbly.
