Step 1: Preheat oven to 350 degrees F.
Step 2: Butter a 9x13 casserole.
Step 3: (I'm just microwaving beans to get hot)
Step 4: 1 lb. 4 oz. cut green beans frozen or 3 c. fresh green beans
Step 5: Boil them in salted water until they are just underdone.
Step 6: Meanwhile, melt 4 tablespoons of butter, add 4 tablespoons of flour, 1 teaspoon salt ( they used more salt back in the day, season to taste)and a good pinch of dry mustard in a skillet
Step 7: Cook over low heat until bubbly.
Step 8: Add 1 1/2 cups milk, cook until thick and smooth.
Step 9: Add 1/2 cup Velveeta processed cheese grated or diced off the heat.
Step 10: Stir until all is melted.
Step 11: Add the beans and pour into the buttered casserole.
Step 12: Sprinkle with grated Parmesan cheese and paprika.
Step 13: Bake at 350 degrees for 30 minutes until hot and bubbly.
