"This is an old recipe that I have had since the 70's. It is off one of those mail order recipe cards. (before the internet). You can cook the bacon in a microwave oven. (this wasn't around either). Because it is served cold it makes a great summer side dish. Enjoy!"

Step by Step Method

Step 1

Combine beans, onions, salad oil, 1/4 cup vinegar, 1/2 tsp salt and the pepper; toss lightly. Cover and chill.

Step 2

Just before serving, drain bean mixture and toss with bacon.

This was a breeze to put together, making it perfect for a weeknight. We enjoyed it as a side to chicken, but boy, this will be part of our rotation during grilling season this summer. Oh, just YUM! I love that this can be made from ingredients I always have on hand, and that, along with the wonderful flavors, will make this recipe one that I will keep and make again and again. Serving it chilled was a welcome change. I admit that I used seasoned rice vinegar because we like a little sweetness, and I also used sweet onions. Thanks, Teresa, this is another keeper! Loved these! While I enjoy green bean salads they often get a pass from another family member. These didn't and I was surprised at how much they raved about these. Maybe bacon was the magic ingredient. LOL I made as directed except for adding a 1/4 t of red pepper flakes and will be making these again and again. Thank you for sharing a new favorite recipe!
