"What's better than coming in from a cold winter's day and having dinner ready in the crockpot ? This soup will make you warm from the inside out. This recipe was based upon Sue Lau's #recipe10707, Thanks Sue for inspiring me. :) Feel free to adjust the seasonings to your own tastes. I felt that the was enough salt from the smoked sausage,but if your taste buds disagree add more.You will have to plan ahead as the beans will have to soak overnight.The soaking of the beans aren't included in the " Prep " time. I know all you seasoned cooks know to do this, before soaking beans make sure all bad beans and bits of rock are discarded. Submitted to " ZAZZ " on 2/5/15. " Keep Smiling :)"

Step by Step Method

Step 1

After draining and rinsing beans from overnight soak,place into crockpot.

Step 2

In a medium skillet over medium heat add oil and heat until hot but not smoking,cook sausage and onion until sausage is browned and onion is soft.

Step 3

Add meat/onions over beans,cover with chicken broth.

Step 4

Then add seasonings, stirring well to combine.

Step 5

After cooking for 3 hours check to see if more broth is needed.

Step 6

Cook on low for another 3 hours or until beans are tender.

This was a tasty dish...my beans took an extra hour to cook before they were ready...I should have added a bit more liquid...because it wasn't a soup...like ellie I used a smoke turkey sausage to keep the WW points down...so I did need to add some salt...made for "Alphabet" tag game...at FFF...thanks for sharing your recipe...

Great and easy crockpot meal - served with banana bread from the freezer. The changes I made was using 2 cups of the beans, 4 cups of the chicken broth, 13 oz of the sausage (and used smocked turkey sausage), instead of the poultry seasoning used Italian seasoning and instead of oregano used thyme. Very good and hearty on a cold day! Thanks for sharing!
