Step by Step Method

Step 1

Wash the beets well and cut off the leaves, leaving an inch or so of stem. (reserve beet greens for another use-good steamed with vinegar drizzled on).

Step 2

Cover with cold water, bring to a boil and simmer, covered until tender, about 40 minutes. Drain and cover with cool or lukewarm water.

Step 3

When cool enough to handle, slip off the skins. Cut the beets into slices or chunks.

Step 4

Peel and cut the carrots into slices or chunks, roughly the same size as cut beets.

Step 5

Steam or boil in lightly salted water about 5 minutes or until tender but not soft. Drain.

Step 6

Combine the ginger, sugar, orange juice, vinegar, orange zest and spices in a saucepan large enough to hold beets and carrots, and bring the mixture to a simmer. Cook until thickened.

Step 7

Put beets and carrots in the pan and simmer in the sauce for about 5 minutes.

This is so good! I used golden beets and multi-colored baby carrots, but otherwise made as directed for a wonderful side dish which went perfectly with our roasted pork and tossed salad. Thanks for sharing!

Perfect! I tossed the carrots in with the beets for the last 5 minutes or so and they were both the right consistency. Loved the delicious sauce. I only had 1/2 pound of beets, so cut everything pretty much in half except used a little less sugar. Best of 2020 for sure!

I waited to review this until I was able to try them as leftovers too...and they are great right from the oven or after spending some time in the fridge. I followed the recipe with just a few minor tweaks...I used yellow beets, added some rutabaga cut about the same size, left out the ginger, added some orange/pepper since I didn't have orange peel (I used OJ) and used regular (not ground mace). I know it sounds like a lot of changes but really the only thing that would change flavor was leaving out nutmeg (my preference) and adding a little pepper. It was great right out of the oven, but the orange flavor is stronger as leftovers...so decide which you prefer and do it that way.

Wonderful flavour - this gets 5 plus. I used rainbow carrots - they are yellow, pale orange & regular orange colour. The combination of ingredients go so well together. This recipe will be made again for sure Thanks Mikekey for a winner
