Step by Step Method

Step 1

Place all ingredients in blender or food processor. Blend until smooth.

Step 2

Strain through a sieve into a small bowl, pressing firmly to extract as much of the liquid as possible. Discard pulp.

Step 3

Pour extracted juice into popsicle moulds.

Step 4

Place in freezer at least 6 hours or overnight.

My niece is diabetic so I wanted to make something she could have for a snack for our Memorial Day barbecue. I just let my son try one of these to see if he liked them and he said they are good to go! I guess the kids are going to be loving these. I made 24 of them so the young and older ones can have one if they want. I used the lesser amount of sugar as the watermelon was quite sweet. My sister brought it up to us from Florida yesterday!
