"This version of a watermelon boat filled with fruit uses canned Asian fruits, but other fruits can also be used such as melon balls and other readily available fruit."
Using a cleaver or a large knife, cut the watermelon in half cross-wise. Scoop out most of the melon pulp with a large spoon, leaving a shell of pulp about 1/2 inch thick inside each half. Remove and discard all seeds. If desired you can cut a design along the edges of each melon half.
Cut the melon pulp into cubes or use an melon baller to make melon balls.
In a large bowl combine all the fruit (-kumquats). Spoon fruit into the two melon shells, dividing fruit evenly between the two shells. Chill until serving.
Other fruits can be used that may be more readily available such as cantaloupe or honeydew, orange sections, berries and other fruit -- can be added or substituted for the fruit listed above.
