Step 1: Using a cleaver or a large knife, cut the watermelon in half cross-wise. Scoop out most of the melon pulp with a large spoon, leaving a shell of pulp about 1/2 inch thick inside each half. Remove and discard all seeds. If desired you can cut a design along the edges of each melon half.
Step 2: Cut the melon pulp into cubes or use an melon baller to make melon balls.
Step 3: In a large bowl combine all the fruit (-kumquats). Spoon fruit into the two melon shells, dividing fruit evenly between the two shells. Chill until serving.
Step 4: Other fruits can be used that may be more readily available such as cantaloupe or honeydew, orange sections, berries and other fruit -- can be added or substituted for the fruit listed above.
