" This is not only an attractive salad it is very tasty as well. If you do not like goat cheese use Feta. The 1/2 cup watercress is the dressed cress after the stems were removed."

Step 1

Put the fresh oregano, thyme and chives in your food processor and chop

Step 2

With the processor running drop in the garlic and let it mince, add egg yolk, vinegar, mustard process for 1/2 minute

Step 3

With your food processor running slowly add the oil in a very slow stream, process for a few seconds after the oil has been added, pour into a cruet

Step 4

Just before serving using a chilled bowl, toss together the wateercress, butter lettuc, radicchio and cheese

Step 5

Drizzle with the dressing, toss. Use as much or as little dressing as you like Serve and enjoy
