Step 1: Put the fresh oregano, thyme and chives in your food processor and chop
Step 2: With the processor running drop in the garlic and let it mince, add egg yolk, vinegar, mustard process for 1/2 minute
Step 3: With your food processor running slowly add the oil in a very slow stream, process for a few seconds after the oil has been added, pour into a cruet
Step 4: Just before serving using a chilled bowl, toss together the wateercress, butter lettuc, radicchio and cheese
Step 5: Drizzle with the dressing, toss. Use as much or as little dressing as you like Serve and enjoy
