Ingredients

The ingredients are:
  • 16 whole green beans, washed, frenched, cooked for 1 minute, drain well
  • 1/2 cup Watercress, washed, dried, all stems removed
  • 3 cups butter lettuce, washed, spin dried and torn to bite size pieces
  • 2 cups radicchio lettuce, washed, spin dried, torn into bite size pieces
  • 2 ounces soft goat cheese, crumbled
  • 2 tablespoons fresh herbs, mixture of oregano, thyme, chives
  • 2 large cloves garlic
  • 1 tablespoon red wine vinegar
  • 1 egg yolk
  • 2 tablespoons dijon mustard
  • 1/2 cup olive oil

How to Make

  • Step 1: Put the fresh oregano, thyme and chives in your food processor and chop

  • Step 2: With the processor running drop in the garlic and let it mince, add egg yolk, vinegar, mustard process for 1/2 minute

  • Step 3: With your food processor running slowly add the oil in a very slow stream, process for a few seconds after the oil has been added, pour into a cruet

  • Step 4: Just before serving using a chilled bowl, toss together the wateercress, butter lettuc, radicchio and cheese

  • Step 5: Drizzle with the dressing, toss. Use as much or as little dressing as you like Serve and enjoy
