"This is a such a nice condiment to serve over or with, grilled chicken or pork. It takes just minutes to make; and, is absolutely delicious. I have posted a recipe that I love to serve this with; "Walnut Crusted Chicken with a Warm Apple Cranberry Relish." You can also, change this up a bit. Add, pears, or a mix of pears and apples; or, try adding pecans or walnuts too. I have even thrown in dried apricots; for something a bit different. This is best served warm; however, it is also very good served cold."

Step by Step Method
Step 1
Bring a small saute pan up to medium heat. Add the butter, apples, cranberries, scallions, a pinch of salt, and one of pepper; and cook for 1 minute. Add the wine (again, you can use apple juice, orange juice, or just water), and continue to cook for 4-5 minutes until tender, but NOT 'mushy.'
Step 2
Finish by adding the honey, and season once again with salt and pepper, if necessary.
Step 3
Serve and ENJOY! ... I love to serve this with my Walnut Crusted Chicken; but, it goes well with any chicken or pork dish.
