Ingredients

The ingredients are:
  • 3/4 cup granny Smith apples, diced (peeled and small diced or any green apple)
  • 1/3 cup dried cranberries (sweetened)
  • 2 tablespoons scallions, chopped (white and green parts)
  • 1 1/2 tablespoons white wine (apple or orange juice, or even water can be substituted)
  • 1 tablespoon honey
  • 1 tablespoon unsalted butter
  • Pinch of salt, to taste
  • Pinch of pepper, to taste

How to Make

  • Step 1: Bring a small saute pan up to medium heat. Add the butter, apples, cranberries, scallions, a pinch of salt, and one of pepper; and cook for 1 minute. Add the wine (again, you can use apple juice, orange juice, or just water), and continue to cook for 4-5 minutes until tender, but NOT 'mushy.'

  • Step 2: Finish by adding the honey, and season once again with salt and pepper, if necessary.

  • Step 3: Serve and ENJOY! ... I love to serve this with my Walnut Crusted Chicken; but, it goes well with any chicken or pork dish.
