Step 1: Bring a small saute pan up to medium heat. Add the butter, apples, cranberries, scallions, a pinch of salt, and one of pepper; and cook for 1 minute. Add the wine (again, you can use apple juice, orange juice, or just water), and continue to cook for 4-5 minutes until tender, but NOT 'mushy.'
Step 2: Finish by adding the honey, and season once again with salt and pepper, if necessary.
Step 3: Serve and ENJOY! ... I love to serve this with my Walnut Crusted Chicken; but, it goes well with any chicken or pork dish.
