"This is my go to dish for dessert, when I'm in a hurry, and want something different, delicious, and unique. It is so easy, and yet, so good. It literally takes a minute or two to prep, 2 minutes to cook; and serve. And, it is a great summertime dessert - light, healthy; and, using fresh and local seasonal fruit. Prep time does include time for the berries to rest before serving."

Step by Step Method
Step 1
Berries ... Add the berries, sugar to taste (this will depend on how sweet the berries are), pinch of salt; and, a squeeze of fresh lemon. Mix well, and set to the side for 15-30 minutes to let the berries release some of their natural juices.
Step 2
Cheese ... Add a little oil to a nonstick saute pan, and bring to medium high heat. Press one side of the cheese slice into the walnuts; then, add to the pan (nut side down), and saute 2 minutes until lightly golden brown. Flip, and continue to grill another 2 minutes until the cheese is soft and heated through. They go quick, so keep an eye on them.
Step 3
Plate, Serve, and ENJOY! ... Drizzle a little of the honey on the plate, top with 2-3 cheese slices per person, drizzle a little more honey over the top; and finish with a spoon of the berries and a mint leaf. It is easy, sweet, light, and really delicious.
