Step by Step Method
Step 1
Heat oven to 425 degrees F
Step 2
Line baking sheet with parchment paper.
Step 3
Combine buttermilk and onions in medium bowl. Whisk flour, cornmeal, sugar and 1/2 tsp black pepper in large bowl to combine.
Step 4
Add 1/2 cup chilled butter and rub into flour with fingers until it resembles coarse meal.
Step 5
Add buttermilk mixture and stir just till moist clumps form.
Step 6
Turn dough onto floured board and knead gently to combine three or four turns.
Step 7
Roll out to 3/4-inch thickness and cut rounds with a two-inch floured cutter.
Step 8
Place biscuits on sheet pan.
Step 9
Re roll scraps
Step 10
Cut and add to sheet pan.
Step 11
Brush tops with the melted butter and sprinkle the tops with a little more pepper and light sea salt.
Step 12
Bake until golden brown, about 20 minutes.
Step 13
Cool slightly, serve warm.
