Step by Step Method

Step 1

Heat oven to 425 degrees F.

Step 2

Line baking sheet with parchment paper.

Step 3

Combine buttermilk and onions in medium bowl.

Step 4

Whisk flour, cornmeal, sugar and 1/2 tsp black pepper in large bowl to combine.

Step 5

Add 1/2 cup chilled butter and rub into flour with fingers until it resembles coarse meal.

Step 6

Add buttermilk mixture and stir just till moist clumps form.

Step 7

Turn dough onto floured board and knead gently to combine three or four turns.

Step 8

Roll out to 3/4-inch thickness and cut rounds with a two-inch floured cutter.

Step 9

Place biscuits on sheet pan.

Step 10

Re roll scraps, cut and add to sheet pan.

Step 11

Brush tops with the melted butter and sprinkle the tops with a little more pepper and light sea salt.

Step 12

Bake until golden brown, about 20 minutes.

Step 13

Cool slightly, serve warm.

Wowzers - these are great!!! I only made half a recipe and used a 3 inch cutter - so it only made 3 biscuits plus a little one. I loved the slight crunch from the cornmeal (Bob's Red Mill medium), the hint of sweetness, and the flavor of the green onion. These will definitely be on the rotation, especially since they are so easy to put together and bake.
