Step by Step Method

Step 1

Cook the rice noodles in a saucepan of boiling water for 2-3 minutes or until soft.

Step 2

Drain, rinse under cold water and drain again.

Step 3

Toss the noodles with the basil and the mint.

Step 4

Combine the lime juice, fish sauce and sugar, add to the noodles and toss well.

Fabulous!!! The seasoning on this is just exactly right, and was so easy to put together! I love that this dish uses ingredients that I always have on hand, so can see making this often. DH and I finished off the whole recipe for lunch between just two of us. :-) It is also versatile - DH added a drizzle of sriracha sauce and crushed peanuts over his. But I thought mine was perfect exactly as written. Thank for posting!
