Step 1

Heat oil in skillet over medium high heat. Add shallot and saute for 5 minutes. Stir in zucchini and stir fry for another 5 minutes and add the bok choy, oregano and cumin and stir fry another 5 minutes.

I cut the recipe down to one serving and made following the recipe. I liked it, but wasn't so sure about the oregano and cumin together. I think I would have liked it better with just one or the other. Next time I will experiment and see which one I like best. Thank you for sharing it here with us Ellie! Linda
