Step by Step Method

Step 1

Microwave the potatoes until tender but still firm, about 4 minutes. (longer if needed. (My microwave is SLOW)

Step 2

Allow to cool at room temperature.

Step 3

Heat oven to 350˚F.

Step 4

Scoop out the centers, leaving a firm 1/4-inch-thick shell.

Step 5

Mash the scooped part in a small bowl, then stir in the melted margarine, chives , cheese, buttermilk, and seasonings.

Step 6

Fill the shells.

Step 7

Dust the tops with paprika.

Step 8

Bake at 350˚F for 15 to 20 minutes, or until heated through.
