Ingredients

The ingredients are:
  • 1 pound baking potatoes (2 large )
  • 2 tablespoons butter, melted
  • 1/2 cup buttermilk
  • 8 ounces sharp cheddar, finely shredded
  • 1 tablespoon fresh chives, minced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper, to taste
  • 1/4 teaspoon paprika, for garnish

How to Make

  • Step 1: Microwave the potatoes until tender but still firm, about 4 minutes. (longer if needed. (My microwave is SLOW)

  • Step 2: Allow to cool at room temperature.

  • Step 3: Heat oven to 350˚F.

  • Step 4: Scoop out the centers, leaving a firm 1/4-inch-thick shell.

  • Step 5: Mash the scooped part in a small bowl, then stir in the melted margarine, chives , cheese, buttermilk, and seasonings.

  • Step 6: Fill the shells.

  • Step 7: Dust the tops with paprika.

  • Step 8: Bake at 350˚F for 15 to 20 minutes, or until heated through.
