Step by Step Method
Step 1
In a soup pot heat the oil.
Step 2
Add lamb and onions and leeks.
Step 3
Add garlic and cumin, water and beer.
Step 4
Add beets and the beet stems. Cook 45 minutes until beets are soft.
Step 5
Add cilantro and chopped beet greens and arugula.
Step 6
Serve, they probably added yogurt to top.
