Step 1: In a soup pot heat the oil.
Step 2: Add lamb and onions and leeks.
Step 3: Add garlic and cumin, water and beer.
Step 4: Add beets and the beet stems. Cook 45 minutes until beets are soft.
Step 5: Add cilantro and chopped beet greens and arugula.
Step 6: Serve, they probably added yogurt to top.
