Ingredients

The ingredients are:
  • 1 tablespoons olive oil
  • 8 ounces lamb meat (stewing lamb, cut into marble sized pieces)
  • 2 yellow onions, chopped
  • 3 cloves garlic, smashed
  • 1 leek, chopped
  • 500 grams beets (with greens, chopped stems minced, 8 beets
  • 1/2 teaspoon cumin
  • 8 cups water
  • 1 bottle (12 ounce) beer
  • FOR TOPPING
  • 1 cup minced cilantro
  • 1 cup chopped arugula

How to Make

  • Step 1: In a soup pot heat the oil.

  • Step 2: Add lamb and onions and leeks.

  • Step 3: Add garlic and cumin, water and beer.

  • Step 4: Add beets and the beet stems. Cook 45 minutes until beets are soft.

  • Step 5: Add cilantro and chopped beet greens and arugula.

  • Step 6: Serve, they probably added yogurt to top.
