"This salad not only is delicious it makes a beautiful addition to your holiday table! I like also like to place slices of red onion rings around the sides of the bowl, the salad mixture may be mixed covered tightly with plastic wrap hours ahead omitting in the apples as they tend to darken just mix in the apples and dressing just before serving, you may want to double the amounts if you are serving more than 8 people."

Step by Step Method
Step 1
For the dressing; in a blender or food processor combine the cranberries, sugar, vinegar, apple juice concentrate, salt and mustard; cover and process until smooth.
Step 2
Slowly add in the oil in a small steady stream (at this point you may refrigerate until ready to use, shake before using).
Step 3
For the salad; place all salad ingredients in a bowl then toss to combine. Just before serving drizzle the dressing over the salad.
