Ingredients

The ingredients are:
  • FOR DRESSING
  • 1 cup cranberries (preferably fresh and halved)
  • 1/2 cup granulated sugar
  • 1/2 cup cider vinegar
  • 1/4 cup apple juice concentrate
  • 3/4 teaspoon salt
  • 1 teaspoon dry mustard powder
  • 1 cup oil (vegetable oil, do not use olive oil)
  • FOR SALAD
  • 1 package (10 ounce) mixed greens
  • 1 apple (medium red apple, unpeeled & diced)
  • 1 apple (Granny Smith apple, unpeeled & diced)
  • 1 cup crumbled feta cheese (or use 1/2 cup grated parmesan cheese)
  • 1 cup dried cranberries
  • 1/2 cup slivered almonds, toasted (can use more)

How to Make

  • Step 1: For the dressing; in a blender or food processor combine the cranberries, sugar, vinegar, apple juice concentrate, salt and mustard; cover and process until smooth.

  • Step 2: Slowly add in the oil in a small steady stream (at this point you may refrigerate until ready to use, shake before using).

  • Step 3: For the salad; place all salad ingredients in a bowl then toss to combine. Just before serving drizzle the dressing over the salad.
