Step 1

Prepare tortellini according to package directions;drain and keep warm.

Step 2

Meanwhile spray a skillet with cooking spray over medium high heat. Add watercress and cook, stirring occasionally until wilted (only a minute or two). Stir in the rest of the ingredients plus 1/4 teaspoon pepper. Cook, tossing until heated through (under 5 minutes).

I doubled the amount of parmesan and cream for more sauce, but otherwise stuck to the recipe. I had more watercress in my bowl because some of the younger ones picked it out. LOL. Delicious! Easy and quick to make.
