Step 1

Slice olives into quarters. Core the tomatoes and slice them into bite-size wedges. Put the olives, tomatoes and shallot in a large bowl and season with salt and pepper. Add vinegar and parsley; season again with salt and pepper and then add the olive oil and toss.

YUM! This will go into my Best of 2025 file. It's easy, quick, and delivers on flavor. I halved my Kalamata olives and used halved cherry tomatoes. I loved the shallot addition. I didn't have parsley so omitted that this time. I also used white wine vinegar instead of sherry vinegar, since that was what I had on hand. This will be a repeat. Thank you!
