"This uses a powdered peanut butter product called PB2. Use it as you would regular peanut sauce. You can stir in chopped fresh cilantro if desired. Yield 3 cups Photo taken by Ruth Frisby."

Step by Step Method

Step 1

Coat a nonstick deep skillet with cooking spray.

Step 2

Saute purple onion and garlic, stirring often until soft.

Step 3

Add the remaining ingredients.

Step 4

Stir until blended and simmer on low for 5 to 10 minutes until flavors blend.

I had to show this recipe some love! I had been on a hunt for a recipe to recreate the peanut sauce from my favorite Thai restaurant. When I found this recipe, I knew it would get me close and I was right! I had to tweak it with more PB2 and less broth for thickness and more curry paste for heat, but other than that, this was perfect. It will be a game changer for my favorite meal. Thanks for the great recipe.
