"A Tex Mex breakfast dish sometimes called Migas in which eggs are scrambled with tortilla chips and usually some breakfast meat and cheese, not to worry the tortilla chips soften when they cook with the eggs. Go ahead and be creative, add whatever ingredients you might think to add in omelet. Double or quadruple it for more."

Step by Step Method

Step 1

Thoroughly whisk the eggs with the milk.

Step 2

Melt the butter in an omelet pan over medium heat. Pour in the eggs. Stir almost constantly. As the eggs begin to set (within just a few seconds), stir in the tortilla pieces and any other optional ingredients. (Or, you may add the cheese on top when the eggs are almost finished to make a mantle). Continue stirring until eggs set as desired. Salt to taste.

Step 3

Serve with warm flour tortillas and refried beans or folded inside a soft flour tortilla as a breakfast sandwich.

I added onion, veggie sausage, left over potato fries, cheddar cheese & salsa. I didn't serve it folded in a tortilla. Cut back on the tortilla chips and only added them just before folding the omelet. Just used 2 eggs for one serving. I was disappointed that they didn't stay crisp but it may have been the type of chips I used. Good Sunday Brunch

Awesome omelet! The tortilla chips give it a yummy chilaquile type flavor, and the chorizo really makes it (I wouldn't leave it out - though I did use about half the amount, since the kind we get is very spicy). We use a nonstick pan so only needed about a quarter of the butter. Served with corn tortillas for a great meal.
