  • 3 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 2/3 cup corn tortilla chips, broken (broken into bite-size pieces)
  • Optional
  • 1/2 cup chorizo sausage (cooked, crumbled)
  • 1/2 cup grated cheddar cheese
  • 1/4 to 1/3 cup diced yellow onions (fried)
  • 1/2 cup diced potatoes (fried)
  • Flour tortilla (large size)
  • Refried beans

How to Make

  • Step 1: Thoroughly whisk the eggs with the milk.

  • Step 2: Melt the butter in an omelet pan over medium heat. Pour in the eggs. Stir almost constantly. As the eggs begin to set (within just a few seconds), stir in the tortilla pieces and any other optional ingredients. (Or, you may add the cheese on top when the eggs are almost finished to make a mantle). Continue stirring until eggs set as desired. Salt to taste.

  • Step 3: Serve with warm flour tortillas and refried beans or folded inside a soft flour tortilla as a breakfast sandwich.
