Step 1

Mix the mayonnaise with pinch of chile powder and chopped fresh jalapeno pepper and set aside.

Step 2

Toast the bread lightly. Spread each side with mayonnaise.

Step 3

Pile on bacon, tomato, avocado, cilantro sprigs and lettuce and top with other slice of toast.

Made for your Wk 14 Football Pool win & I'm sorry I got my tags so out-of-order, esp since this recipe was so ideal for me, my Dallas roots & my fondness for the Tex-Mex cuisine. I admit to using a different bread variety, regular bacon & more avocado than you intended. But IMHO this sammie is to-die-for perfection! I wanted about 3 more just like it, but restrained myself & set aside just enough avocado for an encore tomorrow. If you ditch the 2nd piece of bread & top w/a basted egg, this would also be a great open-face breakfast sandwich. Thx for sharing this recipe w/us. Yum!

Better than a BLT with the avocado addition. I have to admit I used a wee bit more than called for, being the avocado lover that I am. Also used low fat mayo and it worked out well.
