Step by Step Method
Step 1
Preheat oven to 350 degrees Fahrenheit

Cream butter and 2 cups sugar until light and fluffy.

One at a time

Add 2 eggs, beating after each is added.

Beat in vanilla.
Step 6
Separate remaining egg and add yolk to the mixture.

Mix in flour and salt.
Step 8
On a lightly floured board

Roll out dough until thin.
Step 10
Using a shot glass,(or 2 inch glass)

Cut out circles of dough
Step 12
Dipping rim of the glass in flour, as needed, to keep the dough from sticking.
Step 13
Place dough on a greased baking sheet. Beat the remaining egg white slightly and brush on cookies.
Step 14
Mix the cinnamon and 1 teaspoon of sugar
Step 15
Sprinkle on the top of the cookies.
Step 16
Bake in preheated 350 degrees F oven for 7 to 10 minutes, or until edges are light brown.
