"These are such simple 'quick' sandwiches to make. Served warm or cold - they are the perfect party food. They are also great to take on a picnic; or serve at a BBQ too. Obviously, you could make your own biscuits ... but, I take the easy way; and, use a canned biscuit - (like Pillsbury). This makes 8 sliders."

Step by Step Method

Step 1

Biscuits ... First, I really don't like to bake; so, I take the advantage of the canned biscuits (Pillsbury is one brand). However, homemade biscuits are always best. Now, different brands obviously come in different sizes. You can get cans with 5, 6, 8 or 10 biscuits - but, just make sure to buy a large buttermilk/or southern style biscuit - and you need 8 of them. You can also find these in the freezer section of your grocery store.

Step 2

Bake ... Add the biscuits to a baking/sheet pan lined with a sil pat, parchment paper, or foil; and, brush the tops lightly with the milk and honey mixture - and, sprinkle with black pepper. Then, bake the biscuits according to package directions. These can easily be made in advance - they can even be frozen until ready to use.

Step 3

Mock Hollandaise ... Add everything to a small bowl; and, mix to combine. Again, perfect to make ahead.

Step 4

Sandwiches ... First, the biscuits can be served warm or room temperature. If made ahead; the, biscuits can easily be reheated in the microwave in just a few seconds.

Step 5

Also, the ham can be added cold, room temp; or warm too. Simply warm up the ham in the microwave for just a few seconds if you want.

Step 6

Then, add a little hollandaise to the bottom biscuit; and, top with the ham, cheese, and pickles. Spread a little more hollandaise on the top biscuit; and, place on top. Finish with a toothpick through the center - just to hold it together.

Step 7

Note: I think it is important to get the ham and cheese fresh sliced from your local deli; rather than a packaged product. This way, you can get exactly what you want. Also, I have one friend that doesn't eat ham - so, I use turkey; and, it works just as well.

Step 8

Serve and ENJOY! ... Plate the biscuits on a platter and enjoy. As mentioned - perfect for a party, BBQ, or picnic. Easy and delicious; and, I know ... it is just a ham and cheese sandwich; but, they are really addictive.
