Step by Step Method

Step 1

Heat oven to 325 degrees.

Step 2

In a large bowl, Beat ½ cup powdered sugar, butter and vanilla until light and fluffy.

Step 3

Add the flour and pecans and mix until dough holds together.

Step 4

Shape into 1-inch balls. and place 1-inch apart on a parchment lined cookie sheet.

Step 5

Bake 15-20 minutes or until set but NOT browned.

Step 6

Immediately remove from cookie sheet; cool slightly.

Step 7

Add a little powdered sugar to a dish or plate and roll the cookies in them.

Step 8

Cool the cookies completely and roll them a second time in powdered sugar.

Step 9

Store in a airtight container.

I make at least 10 batches of this recipe every Christmas but with one BIG difference. I think that every country claims there.....Mexico, Italy etc. The version I make are the Mexican Wedding cookies from Paula Deen. The recipe is identical. The BIG dirrerence is that they are cooked at 275 for 40 minutes. It makes a HUGE difference in crumbling etc. I also usually use almond extract instead of vanilla, but that is ust a preference. Try it that way once with the time and cooking temp changes and see what you think.

Haven't been in for awhile to do reviews, so I am doing it now. These little snowballs pop right into your mouth and literally melt away. They are so delicious! I made 2 batches. One with walnuts and one with pecans. Both are incredible!

Christmas wouldn't be the same around here if I didn't overload the cookie trays with some of our favorites. These never fail me and are a favorite! I have been known to mix in cinnamon with the powdered sugar. I did this year. Very good too!

Delicious! We call these Russian Tea Cakes and they are one of our favorite cookies for Christmas. Made them ahead and froze until the party.

These are one of my favorites and easy to make. They take a little time to roll up the balls, but that's half the fun of making them! Onto my cookie trays they went and a good thing too, because everyone likes them!
