"This is my favorite recipe for Creamed Eggs because of the fact that you mash the yolks and add to the white sauce, making it a nice sunny color. Very high up on the list of comfort foods and quick prep if you already have the boiled eggs. I found this recipe at Allrecipes years ago and have used it often."

Step by Step Method

Step 1

Remove yolks from eggs and place in small dish. Mash with a fork. Chop whites, set both aside.

Step 2

Melt butter, add flour and stir to make a smooth paste. Cook until bubbly.

Step 3

Gradually add milk, using a whisk if necessary so that no lumps remain. Bring to a boil, stirring constantly. Add chicken seasoning and mashed egg yolks. Stir until thoroughly combined.

Step 4

Add chopped egg white and mix well. Season with salt and pepper to taste.

Step 5

Serve creamed eggs over toast and sprinkle with paprika if desired.

Very creamy and such great eggs for breakfast. My kids liked them and I am happy to make them for them, because they were great eggs for me too! I toasted the toast extra long, so it wouldn't get soggy and it held up to the softness of the eggs well. I used home made bread so I cut it thicker too. In one word, yummy!

I made this for my daughter who had dental surgery. I chopped up the egg white very fine (as she is not allowed to chew yet) and made toasted bread crumbs to give her the sense of eating toast..lol. We both thoroughly enjoyed this breakfast. Thank you so much for sharing this recipe!
