Step 1
Cook the pasta in a large saucepan of salted boiling water for 10–12 minutes or until al dente and then drain and keep warm.
Step 2
Heat 1 tablespoon of the oil in a large, non-stick frying pan over high heat and add the mince, garlic, thyme and chilli and cook, breaking up any lumps with a wooden spoon, for 6–8 minutes or until browned.
Step 3
Add the salt, pepper, sugar and tomato paste and cook for 4–5 minutes and then add the wine and cook, stirring occasionally, for a further 3–4 minutes or until the liquid is reduced.
Step 4
Toss the pasta with the remaining oil, lemon rind, lemon juice and vinegar and then add the mince, tomatoes and olives and toss to combine and top with basil leaves and sprinkle with parmesan to serve.
