Step by Step Method

Step 1

Preheat oven to 425 degrees Fahrenheit.

Step 2

Line a rimmed baking sheet with parchment paper.

Step 3

Place the rinsed chickpeas in a flour sack or other absorbent kitchen towel.

Step 4

Gently roll and pat until the towel has absorbed all of the moisture from the chickpeas.

Step 5

In a large bowl, whisk together the olive oil and spices.

Step 6

Add the chickpeas and toss well to coat them with spices.

Step 7

Transfer the seasoned chickpeas to the baking sheet; arrange in a single layer.

Step 8

Roast for 20-30 minutes, checking halfway through to shake the pan to turn the chickpeas.

Step 9

Remove from the oven once the chickpeas are light and crispy.

Step 10

Serve warm or at room temperature.

Delicious! I had sumac and I didn't know how to use it. Now I know. =) I made 2 small changes. I used cumin seeds instead of ground cumin. And I cook the whole dish in my cast iron skillet.
