Step by Step Method

Step 1

Place sweet potato in a single layer on an oven tray lined with baking paper and spray with olive oil and cook in a very hot oven (240°C) for about 25 minutes, or until browned and tender.

Step 2

Meanwhile, combine oil, vinegar, mint, coriander and onion in a medium bowl and season with salt and pepper and then set aside.

Step 3

Sprinkle sumac over both sides of pork and season with salt and pepper.

Step 4

Heat an oiled, large, non-stick frying pan over a medium to high heat and add pork and cook for about 5 minutes on each side, or until cooked to your liking.

Step 5

Serve pork with sweet potato and salad leaves and spoon over dressing.
