Ingredients

The ingredients are:
  • 850 grams sweet potato, peeled and cut into 1.5 cm pieces (thick)
  • Olive oil spray
  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 tablespoons mint, fresh
  • 2 tablespoons coriander, fresh
  • 1/2 red onion, small and finely chopped
  • 960 grams pork cutlets, trimmed (4 x 240 grams)
  • 2 teaspoons sumac
  • Mixed salad leaves, to serve

How to Make

  • Step 1: Place sweet potato in a single layer on an oven tray lined with baking paper and spray with olive oil and cook in a very hot oven (240°C) for about 25 minutes, or until browned and tender.

  • Step 2: Meanwhile, combine oil, vinegar, mint, coriander and onion in a medium bowl and season with salt and pepper and then set aside.

  • Step 3: Sprinkle sumac over both sides of pork and season with salt and pepper.

  • Step 4: Heat an oiled, large, non-stick frying pan over a medium to high heat and add pork and cook for about 5 minutes on each side, or until cooked to your liking.

  • Step 5: Serve pork with sweet potato and salad leaves and spoon over dressing.
