Step by Step Method
Step 1
Preheat oven to 350 degrees F. Grease a 13x9 baking pan or size desired to fit all mushrooms. Pour a small amount of water into the pan just to cover the bottom so mushrooms won't burn.
Step 2
Remove the stems from the mushrooms (set the caps aside) then finely chop them. Put the stems in a large bowl; add green onion, bell pepper, bread crumbs, 3 tablespoons of the grated cheese, 2 tablespoons of the parsley, and 1/4 to 1/2 teaspoon salt or to taste. Stir in 2 tablespoons of the olive oil or more, to moisten all of the crumbs and make a fairly tight stuffing. Season with pepper to your taste.
Step 3
Transfer all mushrooms into pan. Drizzle on more olive oil, thenSprinkle with more Parmesan cheese. Bake until the mushrooms are crisp on top and heated through about 20-22 minutes.
